Most everyone has heard of huevos rancheros, but this is a truly authentic recipe for the tasty Mexican egg dish.
Ingredients
*2 Tbs. vegetable oil *6 tortillas (corn or flour) *6 lg. eggs *sliced avocado, fresh cilantro, chopped green onion, shredded cheese, salsa, and lime wedges, to garnish
Directions Heat oil over medium-high heat in a large skillet. When oil is hot, fry tortillas for about 10 seconds on each side. Drain on paper towels. Crack eggs in to hot oil and fry eggs to desired doneness. To serve, place soft tortilla on each plate and top with an egg and chosen garnishes.
