Grilled Mexican Veggies with Salsa Verde PDF Print E-mail

A tasty vegetable platter that anyone would enjoy!

Ingredients

*one 13-oz. can tomatillos with liquid
*1 lg. onion, peeled and quartered
*1 clove garlic
*one 4-oz. can green chilies
*2 lg. yellow onions, peeled and slice 1/2-inch thick
*2 bunches green onions, trimmed
*4 lg. tomatoes, stemmed, cored, and cut into 1-inch thick slices
*olive oil for brushing
*salt and pepper
*fresh cilantro, to garnish

Directions

To make salsa, place tomatillos, onion, garlic, and green chilies, in a blender or food processor.  Process until smooth and set aside.  Prepare a hot fire in your grill.  Brush vegetables with oil and season to taste with salt and pepper.  Grill, turning, until you have good grill marks.  Arrange vegetables on a serving platter.  Drizzle with salsa verde, garnish with cilantro, and serve.
