Chilaquiles with Eggs PDF Print E-mail

A tasty breakfast, chilaquiles are often used to cure hangovers.

Ingredients

*4 corn tortillas
*2 med. red tomatoes
*1 sm. white onion
*2 Tbs. butter
*4 eggs
*1/2 tsp. salt
*1/4 tsp. ground black pepper
*1/2 tsp. Tabasco sauce
*1/2 C. grated Parmesan cheese

Directions

Cut tortillas into 1/2-inch strips. De-stem tomatoes and chop into 1/4-inch pieces.  Peel onion and chop into 1/4-inch pieces.  Beat eggs.  Melt butter in a skillet.  Fry tortilla strips until golden brown.  Stir in tomatoes and onion and heat until boiling.  Stir in eggs, salt, pepper, and Tabasco sauce.  Cook until eggs are set, stirring frequently.  Top with Parmesan cheese.  Serve immediately.
