This Mexican recipe is great for vegetarians!
Ingredients
*1 med. white onion *1 sm. green bell pepper *2 celery ribs *6 lg. tomatoes *1 Tbs. vegetable oil *1 tsp. dried oregano *1 tsp. ground cumin *1 tsp. garlic powder *1 Tbs. chili powder *4 C. canned kidney beans *2 C. cashews
Directions
Peel onion and cut into 1/4-inch pieces. Remove seeds and stem from the green pepper and cut into 1/4-inch pieces. Cut celery into 1/4-inch pieces. Dice tomatoes, reserving juice. Heat oil to medium heat. Ad onion, green pepper, and celery. Cook until onion is browned. Add spices and stir well. Transfer mixture to a soup kettle. Add tomatoes and beans. Simmer on low for 3 hours, stirring periodically. Add cashews and heat through just before serving.
